Please savor the luxury of experiencing the ‘Now’ of the Setouchi region with all five senses, within the historic setting of Kangetsuan-Shintoyo.
The finest culinary ingredients from the Akinada Sea.
Savoring the "miracle" of the Akinada Sea, nurtured by fierce currents and the sun.
The Akinada Sea, stretching beyond the window, boasts one of Japan's fastest tidal currents. Red sea bream raised here, which constantly swim against these fierce currents, develop a distinctive bump known as the "Narutoki" proof of their strength. We source this fish directly from local fishermen. Its flesh is muscular and firm, and the more you chew, the more its deep umami flavor overflows.
And on the land, there is a golden bounty.Citrus fruits thrive on terraced stone walls, which ensure good drainage and receive little rainfall. They are nurtured by the sun from the sky and a "second sun" reflected from the sea. The "Ocho Mandarin" (with a history dating back to the Meiji era) and the aromatic, sweet "Ocho Lemon" (fittingly from the birthplace of domestically grown lemons) are truly crystals of the sun.
Fish, citrus, and island vegetables. These top-grade ingredients, nurtured by this demanding natural environment, are prepared exclusively for one group of guests per day. Please enjoy dishes meticulously crafted by listening to the inherent qualities of these ingredients.
Exquisite Hiroshima Sake, the perfect complement to complete the meal.
The finest ingredients require the perfect companion. Hiroshima is one of Japan's three major sake-producing regions. Blessed with a rich climate and pristine water, this area is also considered a sacred place for brewing sake.
Our inn has carefully selected premium local brands, mainly from breweries near Kure City, that harmonize perfectly with the local cuisine. Enjoy our fragrant local sake (jizake) that complements Setouchi white fish, local craft gins and whiskies that resonate with the aroma of citrus fruits, and rich plum wine (umeshu) to beautifully conclude your meal.
Indulge in a marriage of Akinada cuisine and Aki sake, all while savoring a private space where no one will disturb you. Enjoy an exquisite evening for adults.
